This is what my Mom helped me make for Erik's wedding! It is from my Mom's side of the family, my Yaya (what we call my Greek Grandma) taught my mother how to make it and then my mom taught me. It takes a lot of time, but I made them at home, we froze them and then sent them in dry ice to Allison's Nana. Spanakopita:
2 pkgs 10- oz chopped frozen spinach, thawed
3 bunches spring onions, finely chopped
4 tblsp butter
4 eggs, beaten
½ lb Feta cheese
8 oz cottage cheese
1/4lb butter, melted
1 tblsp minced dill
salt/pepper to taste
½ lb butter for Filo
1 lb Filo pastry sheets
SECRET INGREDIENT: Nutmeg to taste!
Thaw and drain spinach.
Sauté onions in 4 tbsp butter.
Add spinach and heat until water is gone.
Mix beaten eggs with crumbled Feta, cottage cheese, melted butter &
dill.
Add onions, s/p to taste and secret ingredient!
Line a 13x9, buttered pan with 6-8 Filo sheets, brushing each sheet
with melted butter.
Place 1/3 of the cheese/spinach mixture over Filo and cover with 6-8
more Filo sheets as before.
Repeat until c/s mix is gone. End with Filo sheets on top.
Tuck Filo in around the edges of the pan, brush top with leftover
butter, score top of filo into 2” squares.
Bake in 350° for 1 hour or until Filo is browning.
Serve hot, warm or cool!
